Preparation Steps
Prepare the Egg Mixture
In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
Soak the Bread
Dip each slice of bread into the egg mixture, allowing it to soak for about 1-2 minutes on each side to absorb the liquid.
Cook the French Toast
In a large skillet, melt the butter over medium heat. Once the butter is melted and bubbly, add the soaked bread slices to the skillet. Cook for 3-4 minutes on each side, or until golden brown.
Prepare the Toppings
While the French toast is cooking, arrange the sliced apples on a plate. In a separate bowl, mix the mascarpone cheese with mango chutney until smooth.
Assemble the Dish
Once the French toast is cooked, place it on serving plates. Top each slice with a generous dollop of the mascarpone and chutney mixture, a handful of sliced apples, and a sprinkle of granola.
Serve
Serve the Roanoke French Toast warm, with additional mango chutney or granola on the side if desired.
