Method

Cooking the Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear, about 2-3 minutes.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for 10 minutes.

    Fluff the Rice

    After the rice has rested, fluff it with a fork and set aside to cool slightly.

Preparing the Ingredients

    Prepare Edamame

    If using frozen edamame, cook according to package instructions. Drain and set aside to cool.

    Slice the Avocado

    Cut the avocado in half, remove the pit, and slice into thin wedges.

    Slice the Cucumber

    Slice the cucumber into thin rounds or half-moons, depending on your preference.

Assembling the Poké Bowl

    Layer the Bowl

    In a large bowl, start with a base of sushi rice. Top with the edamame, avocado slices, cucumber, pickled ginger, seaweed salad, and chopped peanuts.

    Add Sauces

    Drizzle the wasabi soy sauce and togarashi mayo over the top of the assembled ingredients.

    Serve immediately and enjoy your fresh poké bowl!
