Prepare the Pie Crust
If using a store-bought pie crust, follow the package instructions for pre-baking. If making your own, roll out the dough and fit it into a 9-inch pie dish. Crimp the edges and chill in the refrigerator for 30 minutes.
Toast the Pecans
Preheat your oven to 350°F (175°C). Spread the pecans on a baking sheet and toast them in the oven for about 8-10 minutes until fragrant, stirring halfway through. Remove from oven and let cool.
Mix the Filling
In a large mixing bowl, combine the granulated sugar, light corn syrup, eggs, vanilla extract, and salt. Whisk together until smooth and well combined.
Add the Pecans
Fold the toasted pecans into the filling mixture until evenly distributed.
Assemble the Pie
Pour the pecan filling into the prepared pie crust, spreading it evenly.
Bake the Pie
Bake the pie in the preheated oven for 60-70 minutes, or until the filling is set and a knife inserted in the center comes out clean. The crust should be golden brown.
Cool the Pie
Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving.
Serve with Whipped Cream and Mint
When ready to serve, slice the pie and top each slice with a dollop of whipped cream and a few fresh mint leaves for garnish.
