Mini Muffins

Prepare Muffin Batter

In a mixing bowl, combine flour, sugar, baking powder, and salt. In another bowl, whisk together eggs, milk, vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in blueberries.

Bake Muffins

Preheat oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease with cooking spray. Fill each muffin cup about 2/3 full with the batter. Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean. Let cool before serving.

Croissants

Prepare Croissants

Remove frozen croissant dough from packaging and place on a baking sheet lined with parchment paper. Allow to rise at room temperature for 1-2 hours or until doubled in size.

Bake Croissants

Preheat the oven to 375°F (190°C). Bake croissants for 15-20 minutes or until golden brown. Remove from the oven and let cool before serving.

Danish

Prepare Danish Filling

In a mixing bowl, beat together cream cheese, powdered sugar, and lemon juice until smooth. Set aside.

Assemble and Bake Danish

Roll out each puff pastry sheet and cut into squares. Place a spoonful of cream cheese mixture in the center of each square, top with a teaspoon of jam, and fold over corners to seal. Preheat oven to 400°F (200°C) and bake for 15-20 minutes or until golden brown. Let cool before serving.

Scones

Prepare Scone Dough

In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the cream and dried cranberries until just combined.

Bake Scones

Preheat oven to 400°F (200°C). Turn the dough out onto a lightly floured surface and shape into a circle about 1 inch thick. Cut into wedges and place on a baking sheet. Bake for 15-20 minutes or until golden brown. Cool slightly before serving.
