Ravioli Filling

Pasta Dough

Method

Ravioli Filling

  1. 1

    Prepare the Filling

In a mixing bowl, combine the lobster meat, shrimp, ricotta cheese, Parmesan cheese, parsley, salt, and black pepper. Mix well until all ingredients are combined.

Pasta Dough

  1. 2

    Make the Dough

On a clean surface, mound the flour and make a well in the center. Crack the eggs into the well and add salt. Slowly incorporate the flour into the eggs until a dough forms. Knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Vodka Sauce

  1. 3

    Prepare the Sauce

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add crushed tomatoes and vodka, simmer for 10 minutes. Stir in heavy cream, red pepper flakes, and salt. Simmer for another 5 minutes until slightly thickened.

Garlic Breadcrumbs

  1. 4

    Make the Breadcrumbs

In a bowl, mix bread crumbs, garlic powder, parsley, olive oil, salt, and black pepper. Spread the mixture on a baking sheet and bake at 350°F (175°C) for 10 minutes or until golden brown, stirring occasionally.

Assemble Ravioli

  1. 5

    Form Ravioli

Roll out the pasta dough into thin sheets. Place a small spoonful of the filling on one sheet, leaving space between each. Brush water around the filling and top with another sheet of dough. Press down to seal and cut into squares.

  2. 6

    Cook Ravioli

Bring a pot of salted water to a boil. Add the ravioli and cook for about 4-5 minutes or until they float to the top. Remove with a slotted spoon.

Serve

  1. 7

    Serve the Dish

Place the cooked ravioli on a plate, top with vodka sauce, and sprinkle with garlic breadcrumbs before serving.
