Method

Grilled Mahi Mahi

  1. 1

    Prepare the Marinade

In a bowl, mix together the olive oil, lemon juice, garlic powder, salt, and black pepper.

  2. 2

    Marinate the Mahi Mahi

Place the Mahi Mahi fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes.

  3. 3

    Grill the Fish

Preheat the grill to medium-high heat. Grill the Mahi Mahi fillets for about 4-5 minutes on each side or until cooked through and flaky.

Mango Kiwi Salsa

  1. 4

    Combine Ingredients

In a bowl, combine the diced mango, diced kiwi, finely chopped red onion, chopped cilantro, lime juice, and salt.

  2. 5

    Mix and Chill

Gently mix the salsa together and let it sit for at least 10 minutes to allow the flavors to meld.

Banana Coconut Sauce

  1. 6

    Prepare the Sauce

In a saucepan over medium heat, combine sliced bananas, coconut milk, brown sugar, and vanilla extract.

  2. 7

    Cook the Sauce

Simmer the mixture for about 5-7 minutes until the bananas are soft and the sauce has thickened slightly.

  3. 8

    Blend (Optional)

For a smoother sauce, blend the mixture until smooth using an immersion blender.

Sushi Rice

  1. 9

    Rinse the Rice

Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

  2. 10

    Cook the Rice

In a pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes.

  3. 11

    Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, fluff it with a fork and gently mix in the vinegar mixture.
