Marinate the Mahi Mahi
Place the Mahi Mahi fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes.

Grill the Fish
Preheat the grill to medium-high heat. Grill the Mahi Mahi fillets for about 4-5 minutes on each side or until cooked through and flaky.

Mix and Chill
Gently mix the salsa together and let it sit for at least 10 minutes to allow the flavors to meld.
Banana Coconut Sauce

Prepare the Sauce
In a saucepan over medium heat, combine sliced bananas, coconut milk, brown sugar, and vanilla extract.

Simmer the mixture for about 5-7 minutes until the bananas are soft and the sauce has thickened slightly.

For a smoother sauce, blend the mixture until smooth using an immersion blender.
Sushi Rice

Rinse the sushi rice under cold water until the water runs clear to remove excess starch.
