    Prepare the Base

    In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring frequently until the sugar dissolves completely.

    Add Flavorings

    Once the mixture is heated, remove it from the heat and stir in the vanilla extract and a pinch of salt. Allow it to cool slightly.

    Chocolate Gelato

    For the chocolate gelato, whisk in the unsweetened cocoa powder until smooth. If using chopped dark chocolate, melt it in a separate bowl and then mix it into the base.

    Pistachio Gelato

    For the pistachio gelato, blend the pistachios in a food processor until they turn into a fine paste. Mix this paste into the cooled base until well combined.

    Chill the Mixture

    Cover the gelato mixtures with plastic wrap and refrigerate for at least 2 hours or until completely chilled.

    Churn the Gelato

    Once chilled, pour the chocolate mixture into an ice cream maker and churn according to the manufacturer’s instructions. Repeat with the pistachio mixture.

    Freeze

    Transfer the churned gelato into airtight containers and freeze for at least 4 hours to firm up before serving.
