Marinate the Chicken
In a large bowl, combine buttermilk, salt, black pepper, and paprika. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Breading
In a shallow dish, whisk together the all-purpose flour, cornstarch, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Set aside.
Frying the Chicken

Fry the Chicken
Heat oil in a deep frying pan or pot to 350°F (175°C). Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the breading mixture, pressing it onto the chicken to ensure a good coating. Fry the chicken in batches for about 5-7 minutes on each side or until golden brown and cooked through. Use a thermometer to ensure an internal temperature of 165°F (75°C).

While the chicken is frying, prepare the frozen French fries according to package instructions, either baking or frying them until they are crispy and golden brown.

Toast the burger buns lightly. Spread a generous amount of mayonnaise on the bottom half of each bun. Place a piece of fried chicken on top, followed by pickles, coleslaw, and a drizzle of house hot sauce. Top with the other half of the bun.
