    Melt the Chocolate

    Chop the bittersweet chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler) and stir the chocolate until it has completely melted and is smooth. Remove from heat and let it cool slightly.

    In a separate bowl, pour the heavy cream and whip it using an electric mixer until soft peaks form. Be careful not to over-whip; it should be thick but still pourable.
