Heat olive oil in a large skillet over medium heat. Add diced potatoes, season with salt and black pepper, and cook until crispy and golden brown, about 15-20 minutes, stirring occasionally.

In a separate pan, cook the crumbled sausage and chopped bacon over medium heat until fully cooked and crispy. Drain excess fat and set aside.

Combine Hash Ingredients
Add the cooked sausage, bacon, and sautéed vegetables to the crispy potatoes. Mix well and adjust seasoning if necessary.

In a separate non-stick pan, cook the eggs over medium heat to your desired doneness (over medium recommended).

Serve the potato and meat mixture on plates, topped with the cooked eggs, pico de gallo, jalapenos, diced avocado, and crispy tortilla strips.
