    Prepare the Filling

    In a skillet over medium heat, add a bit of oil and sauté the diced onion and green bell pepper until softened. Add the shaved steak, season with salt and black pepper, and cook until the steak is browned and cooked through. Remove from heat and stir in the shredded provolone cheese until melted. Let the filling cool slightly.

    Assemble the Egg Rolls

    Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2-3 tablespoons of the steak filling in the center. Fold the bottom corner over the filling, then fold the sides in, and roll tightly. Seal the top corner with a little water.

    Fry the Egg Rolls

    In a deep fryer or heavy pot, heat oil to 350°F (175°C). Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

    Serve

    Serve hot with spicy ketchup on the side for dipping.
