    Prepare the Beef Short Ribs

    Preheat your oven to 300°F (150°C). Season the beef short ribs with salt and pepper. In a large oven-safe pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned. Remove from the pot and set aside.

    Sauté Aromatics

    In the same pot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until softened.

    Deglaze and Braise

    Pour in the red wine to deglaze the pot, scraping up any browned bits. Add the beef broth and BBQ sauce, and bring to a simmer. Return the short ribs to the pot, cover, and transfer to the oven. Braise for 3-4 hours until the meat is tender.

    Prepare Whipped Potatoes

    While the ribs are braising, peel and chop the potatoes. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt to taste.

    Sauté Seasonal Vegetables

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the seasonal vegetables and sauté until tender, about 5-7 minutes. Season with salt and pepper.

    Serve

    Once the beef short ribs are done, remove them from the oven and let them rest for a few minutes. Serve the ribs on a plate with whipped potatoes, sautéed vegetables, and drizzle with the BBQ pan sauce. Top with fried onion straws and garnish with fresh herbs.
