    Prepare the Remoulade

    In a bowl, combine mayonnaise, Dijon mustard, hot sauce, paprika, chopped pickles, and lemon juice. Mix well and set aside.

    Prepare the Chipotle Cocktail Sauce

    In another bowl, mix together ketchup, chipotle peppers, Worcestershire sauce, and lemon juice until well blended. Set aside.

    Prepare the Shrimp or Oysters

    In a mixing bowl, combine flour, cornmeal, salt, black pepper, and cayenne pepper. Dredge the oysters or shrimp in buttermilk, then coat them in the flour mixture.

    Fry the Shrimp or Oysters

    Heat oil in a deep fryer or large skillet to 350°F (175°C). Fry the coated shrimp or oysters in batches until golden brown and crispy, about 3-4 minutes. Drain on paper towels.

    Assemble the Po'boys

    Slice the French bread or hoagie rolls lengthwise. Spread spicy remoulade on both sides of the bread, add shredded lettuce, sliced tomatoes, and then layer with crispy shrimp or oysters. Drizzle with chipotle cocktail sauce.

    Serve

    Serve the po'boys immediately while hot, accompanied by extra chipotle cocktail sauce on the side.
