Method
Preparation of Oysters
Prepare the Oysters
Shuck the oysters and place them on a tray. Rinse and pat dry with paper towels.
Set Up Breading Station
In one bowl, mix flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, beat the eggs and mix with buttermilk.
Bread the Oysters
Dip each oyster first into the egg mixture, then coat with the flour mixture. Shake off excess flour.
Frying
Heat Oil
In a large skillet, heat vegetable oil over medium-high heat until hot.
Fry Oysters
Carefully add the breaded oysters to the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes on each side until golden brown and crispy.
Drain Oysters
Use a slotted spoon to remove the oysters and place them on a paper towel-lined plate to drain excess oil.
Sauce Preparation
Make Spicy Remoulade
In another bowl, combine mayonnaise, Dijon mustard, horseradish, hot sauce, paprika, lemon juice, and parsley. Mix well.
Serving
Serve
Plate the crispy oysters and serve with chipotle cocktail sauce and spicy remoulade on the side.
