    Prepare the mussels

    Rinse the mussels under cold water and remove any beards. Discard any mussels that are open and do not close when tapped.

    Make the broth

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

    Add tomatoes and chipotle

    Stir in the diced tomatoes and chipotle peppers in adobo sauce. Cook for about 5 minutes until the tomatoes soften.

    Add mussels

    Add the cleaned mussels to the skillet. Pour in lime juice, season with salt and black pepper, and cover the skillet. Cook for 6-8 minutes until the mussels open.

    Finish with cilantro

    Once the mussels are cooked, remove from heat and stir in the chopped cilantro. Serve immediately with grilled baguette.
