Directions for Assembly and Cooking

    Prepare the Croquettes

    In a bowl, combine the smoked salmon, mashed potatoes, egg, chopped dill, salt, and black pepper. Mix until well combined. Form the mixture into small patties and coat each with bread crumbs.

    Cook the Croquettes

    Heat olive oil in a skillet over medium heat. Fry the croquettes until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

    Make the Goat Cheese Spread

    In a separate bowl, mix the sun-dried tomatoes, goat cheese, and lemon juice until smooth. Adjust seasoning with salt and pepper as needed.

    Prepare the Lemon-Caper Aioli

    In another bowl, mix the mayonnaise, lemon juice, and chopped capers. Stir until well combined.

    Assemble the Sandwich

    Spread the goat cheese mixture on the bottom half of each brioche bun. Place a croquette on top, add a handful of spicy greens, and drizzle with the lemon-caper aioli. Top with the other half of the brioche bun.
