Make the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, 0.5 cups of granulated sugar, and melted butter until well mixed. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until golden brown. Remove from the oven and let it cool.

Prepare the Filling
In another mixing bowl, whisk together the egg yolks until they are thick and pale. Gradually add the sweetened condensed milk, key lime juice, and vanilla extract. Mix until smooth and well combined.

Assemble the Pie
Pour the filling into the cooled graham cracker crust. Bake for an additional 15 minutes. Remove from the oven and let it cool to room temperature, then refrigerate for at least 3 hours to set.

Make the Meringue
In a clean bowl, beat the egg whites until soft peaks form. Gradually add 0.25 cups of granulated sugar, continuing to beat until stiff peaks form. Spread the meringue over the chilled pie, making sure to seal the edges.

Toast the Meringue
Using a kitchen torch or broiler, toast the meringue until golden brown. Be careful not to burn it. Allow to cool slightly before serving.
