Ice Cream Preparation

    Cook the Sweet Corn

    In a medium saucepan, combine sweet corn with milk and sugar. Cook over medium heat until the mixture is steaming but not boiling. Remove from heat and let cool.

    Blend and Strain

    Blend the corn mixture until smooth. Strain through a fine mesh sieve to remove solids.

    Make the Custard

    In a separate bowl, whisk egg yolks. Slowly add the warm corn mixture to the yolks, whisking constantly. Return the mixture to the saucepan and cook over low heat until thickened.

    Chill and Freeze

    Stir in heavy cream and vanilla extract. Chill the mixture in the refrigerator for at least 4 hours before churning in an ice cream maker.

Sorbet Preparation

    Prepare the Banana Mixture

    In a blender, combine bananas, brown sugar, water, and lemon juice. Blend until smooth.

    Chill the Mixture

    Transfer the banana mixture to a bowl and chill in the refrigerator for at least 1 hour.

    Freeze the Sorbet

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions. Add chopped pecans in the last few minutes of churning.

    Serve

    Transfer the sorbet to a container and freeze for at least 2 hours before serving.
