Preparation Steps

  1. 1

    Pickle the Red Onion

Thinly slice the red onion and place it in a bowl. Pour apple cider vinegar over the onions, ensuring they are fully submerged. Let them pickle for at least 30 minutes.

  2. 2

    Prepare the Avocado Puree

In a blender, combine the flesh of the avocados and lime juice. Blend until smooth. Season with salt and pepper to taste.

  3. 3

    Grill the Portabella Mushrooms

Preheat the grill to medium-high heat. Brush the portabella mushrooms with olive oil, and season with salt and pepper. Grill for about 5-7 minutes on each side, until tender and slightly charred.

  4. 4

    Assemble the Dish

On each grilled portabella mushroom, spread a layer of goat cheese, followed by a generous dollop of avocado puree, a spoonful of tomato chutney, and top with pickled red onions and mixed greens.

  5. 5

    Serve

Serve the layered portabella mushrooms warm as an appetizer or main dish.
