Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Season both sides with salt and black pepper.

Set up Breading Station
In one bowl, place the flour. In a second bowl, pour the buttermilk. In a third bowl, combine the cornmeal with a pinch of salt and pepper.

Bread the Tomatoes
Dredge each tomato slice in flour, then dip into the buttermilk, and finally coat with the cornmeal mixture.

Fry the Tomatoes
In a large skillet, heat the cooking oil over medium-high heat. Once hot, carefully add the breaded tomato slices and fry until golden brown, about 3-4 minutes per side. Drain on paper towels.

Prepare the Lettuce and Ham
While the tomatoes are frying, wash and dry the Bibb lettuce. Cook the country ham slices in a separate skillet until crispy. Drain on paper towels.

Assemble the Dish
On a plate, layer the Bibb lettuce, followed by the fried green tomatoes, crispy country ham, and crumbled goat cheese. Drizzle with buttermilk dressing if desired.
