Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half. Rinse under cold water and pat dry.

Cook the Ham
Dice the country ham into small pieces and set aside.

Fry the Brussels Sprouts
In a large skillet, heat the olive oil over medium-high heat. Add the Brussels sprouts, cut side down, and cook for about 5-7 minutes until they are golden brown and crispy. Stir occasionally.

Add the Ham
Add the diced country ham to the skillet and sauté with the Brussels sprouts for an additional 3-4 minutes until the ham is slightly crispy.

Make the Vinaigrette
In a small bowl, whisk together the whole grain mustard, red wine vinegar, honey, salt, and black pepper.

Pour the vinaigrette over the Brussels sprouts and ham mixture. Toss to coat evenly.
