    Prepare the Ribs

    Preheat the oven to 300°F (150°C). Rub the baby back ribs with salt, pepper, garlic powder, and paprika. Place on a baking sheet and cover tightly with aluminum foil. Bake for 2.5 to 3 hours until tender.

    Make the Jalapeno Buttermilk Dressing

    In a bowl, whisk together buttermilk, chopped jalapeno, lemon juice, minced garlic, salt, and pepper. Refrigerate until ready to use.

    Prepare the Fried Onion Straws

    In a bowl, combine flour, cornstarch, salt, and pepper. Dredge the sliced onions in the mixture. Heat oil in a frying pan over medium heat. Fry the onions until golden brown. Drain on paper towels.

    Finish the Ribs

    Remove the ribs from the oven. Brush generously with BBQ sauce and broil for 5-7 minutes until caramelized. Serve hot with jalapeno buttermilk dressing and topped with fried onion straws.
