Fried Avocado and Filling

Method

Preparation

  1. 1

    Prepare the Aioli

In a bowl, combine mayonnaise, lemon juice, capers, dill, minced garlic, salt, and black pepper. Mix well until smooth. Set aside.

  2. 2

    Prepare the Filling

In a skillet, cook the gulf shrimp and bay scallops over medium heat until opaque and cooked through, about 3-4 minutes. Remove from heat and let cool. In a bowl, combine cooked seafood with crab meat and mix with half of the aioli. Set aside.

  3. 3

    Prepare the Avocados

Cut the avocados in half, remove the pit, and scoop out some flesh to create enough space for the filling. Brush the edges with lemon juice to prevent browning.

  4. 4

    Bread the Avocados

Dredge the avocado halves in flour, dip into the beaten eggs, and finally coat with panko breadcrumbs.

  5. 5

    Fry the Avocados

Heat vegetable oil in a deep pan to 180°C (350°F). Fry the breaded avocado halves for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

  6. 6

    Assemble the Dish

Place a bed of baby mixed greens on a plate, place the crispy fried avocado halves on top, and fill them with the seafood mixture. Drizzle with the remaining aioli and serve immediately.
