    Cook the Seafood

    In a large pot of salted boiling water, add the gulf shrimp and bay scallops. Cook for 3-4 minutes until shrimp are pink and scallops are opaque. Drain and transfer to an ice bath to chill. Once cooled, drain again and set aside.

    Prepare the Aioli Mixture

    In a bowl, combine the aioli, lemon juice, capers, and fresh dill. Mix well until all ingredients are thoroughly combined.

    Combine Seafood and Aioli

    Gently fold the chilled shrimp, scallops, and lump crab meat into the aioli mixture. Ensure all seafood is coated evenly. Season with salt and pepper to taste.

    Assemble the Po'boys

    Split the French bread or hoagie rolls lengthwise without cutting all the way through. Layer shredded lettuce and diced tomatoes on the bottom half of each roll. Spoon the seafood salad mixture generously on top.

    Serve

    Close the sandwiches and serve immediately, or chill further in the refrigerator for 15-30 minutes before serving for an even cooler treat.
