    Prepare the avocado puree

    In a blender, combine the avocado, a pinch of salt, and a splash of lemon juice. Blend until smooth and set aside.

    Prepare the tuna

    Pat the ahi tuna steaks dry with paper towels and season both sides with blackening spice, salt, and black pepper.

    Sear the tuna

    Heat olive oil in a skillet over high heat. Once hot, add the seasoned tuna steaks and sear for about 1-2 minutes on each side for rare, or until desired doneness.

    Slice the tomato

    While the tuna is cooking, slice the tomato into thin rounds.

    Assemble the po'boy

    Slice the French bread or po'boy rolls lengthwise. Spread a generous amount of avocado puree on one side, followed by the seared tuna, tomato slices, aioli, and pickled red onion.

    Close the sandwich and serve immediately, optionally with extra aioli on the side.
