Cooking Instructions

  1. 1

    Prepare the Whipped Potatoes

Peel and chop the potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot.

  2. 2

    Make the Whipped Potatoes

Add heavy cream, 2 tablespoons of butter, salt, and pepper to the potatoes. Mash until smooth and creamy. Keep warm.

  3. 3

    Grill the Asparagus

Toss the asparagus with olive oil, salt, and pepper. Grill on medium heat for about 5-7 minutes until tender and slightly charred.

  4. 4

    Cook the Filet Mignon

Preheat the grill or skillet over high heat. Season the filet mignon with salt and pepper. Grill for about 4-5 minutes on each side for medium rare, or until desired doneness.

  5. 5

    Prepare the Lobster Compound Butter

In a bowl, mix the lobster meat, remaining butter, garlic, and parsley. Blend well.

  6. 6

    Make the Natural Reduction

In a saucepan, reduce the beef stock over medium heat until thickened, about 10 minutes.

  7. 7

    Assemble the Dish

Place a generous scoop of whipped potatoes on each plate. Top with grilled asparagus. Slice the filet mignon and place it on the vegetables. Add a dollop of lobster compound butter and drizzle with the natural reduction.
