Preparation and Cooking

    Prepare the Caramelized Onion Jam

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onion and cook until softened. Sprinkle with brown sugar and cook until caramelized, about 15 minutes. Stir in balsamic vinegar and cook for an additional 5 minutes. Remove from heat and set aside.

    Cook the Bacon

    In the same skillet, add the smoked bacon slices and cook until crispy. Remove from skillet and place on paper towels to drain excess fat. Crumble the bacon once cooled.

    Prepare the Steak

    Preheat the grill to high heat. Season the NY strip steak with salt and black pepper on both sides. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Make the Natural Reduction

    In a small saucepan, combine beef broth and remaining olive oil. Bring to a simmer and reduce by half. This should take about 10-15 minutes.

    Plate the Dish

    Once the steak is cooked, let it rest for a few minutes. Slice the steak and top with caramelized onion jam, crumbled bacon, and drizzle with the natural reduction. Serve alongside fried mac & cheese and seasonal vegetables.
