Risotto Ingredients

Method

Cooking Directions

  1. 1

    Prepare the Broth

In a saucepan, heat the chicken or vegetable broth over medium heat. Keep it warm but not boiling.

  2. 2

    Sauté the Aromatics

In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

  3. 3

    Toast the Rice

Add the Arborio rice to the skillet and stir to coat the grains. Toast the rice for about 2 minutes, until slightly translucent.

  4. 4

    Deglaze with Wine

Pour in the white wine and cook, stirring frequently, until the wine has mostly evaporated.

  5. 5

    Add Broth Gradually

Start adding the warm broth one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding more broth. Continue this process for about 18-20 minutes, or until the rice is al dente and creamy.

  6. 6

    Finish with Cheese and Butter

Once the rice is cooked, remove from heat and stir in the remaining tablespoon of butter and the grated Parmesan cheese. Season with salt and black pepper to taste.

  7. 7

    Serve

Garnish with chopped fresh parsley and serve immediately.
