    In a large mixing bowl, combine flour and salt. Create a well in the center and add eggs. Mix together until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    In a bowl, mix ricotta cheese, grated Parmesan, chopped spinach, salt, pepper, and nutmeg until well combined.

    Roll Out the Dough

    Divide the dough into four pieces. Roll out each piece as thin as possible on a floured surface.

    Assemble the Ravioli

    Place a teaspoon of filling on one sheet of dough, leaving space between each. Moisten the edges with water, cover with another sheet of dough, and seal tightly. Cut into squares.

    Cook the Ravioli

    Bring a pot of salted water to a boil. Add ravioli and cook for about 3-4 minutes until they float to the surface. Remove with a slotted spoon.
