Prepare the Porcini Mushrooms
Soak the dried porcini mushrooms in warm water for about 30 minutes until rehydrated. Drain and chop.

Cook the Pasta
In a large pot of salted boiling water, cook the pappardelle according to package instructions until al dente. Drain and set aside.

Prepare the Sauce
In the same skillet used for the filet, add the soaked and chopped porcini mushrooms and sun-dried tomatoes. Sauté for 3-4 minutes. Pour in the Chianti wine and let it simmer for about 5 minutes, allowing the alcohol to evaporate.

Combine Ingredients
Add the tomato sauce to the skillet and stir to combine. Let it cook for another 5 minutes. Add the cooked pappardelle to the skillet and toss to coat the pasta in the sauce.

Finish the Dish
Slice the filet mignon and arrange it on top of the pasta. Drizzle with truffle oil and sprinkle crumbled goat cheese over the top. Adjust seasoning with salt and black pepper if needed.
