Prepare the Potatoes
Preheat the oven to 200°C (400°F). Wash and chop the potatoes into small cubes. Toss them with olive oil, salt, and pepper. Spread them on a baking tray and roast in the oven for 25-30 minutes until golden brown.

Cook the Filet Mignon
Season the filet mignon with salt and pepper. In a skillet over medium-high heat, add a tablespoon of olive oil. Sear the filet for about 4-5 minutes on each side for medium-rare, adjusting the time to your preferred doneness. Remove from the skillet and let it rest.

Make the Gorgonzola Sauce
In the same skillet, reduce the heat to medium and add minced garlic. Sauté for 1 minute until fragrant. Add the heavy cream and Gorgonzola cheese, stirring until the cheese melts and the sauce is creamy. Season with salt and pepper to taste.
