Method
Preparation of the Halibut
Season the Halibut
Preheat your oven to 400°F (200°C). Pat the halibut fillets dry with paper towels, then drizzle olive oil over both sides. Season with salt and black pepper.
Prepare the Baking Dish
In a baking dish, place the seasoned halibut fillets and set aside.
Roasting the Vegetables
Prepare the Vegetables
Halve the cherry tomatoes, mince the garlic cloves, and dice the yellow onion. Chop the fresh basil leaves roughly.
Mix the Vegetables
In a large bowl, combine the cherry tomatoes, minced garlic, diced onion, chopped basil, kalamata olives, and capers. Drizzle with a little more olive oil and toss well.
Roast the Vegetables
Spread the vegetable mixture evenly over the halibut fillets in the baking dish. Roast in the preheated oven for about 20-25 minutes, until the halibut is cooked through and flakes easily with a fork.
Cooking the Pasta
Boil the Pasta
While the halibut is roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Serving
Plate the Dish
Once the halibut is done, carefully transfer the fillets to plates, spoon the roasted tomato and vegetable mixture over the top, and serve alongside the cooked pasta.
Garnish and Enjoy
