Chicken Preparation
Grill the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Add Toppings
In the last 2 minutes of grilling, layer each chicken breast with 2 slices of prosciutto, a handful of fresh spinach, and a quarter cup of roasted red peppers. Top each with shredded Asiago cheese. Close the grill lid to melt the cheese.
Mushroom Brandy Sauce
Add Brandy and Cream
Carefully pour in the brandy and allow it to simmer for about 2-3 minutes, reducing slightly. Stir in the heavy cream and season with salt and black pepper. Let the sauce simmer on low heat for another 5 minutes or until it thickens slightly.
Serving
Plate and Serve
Place the grilled chicken topped with prosciutto, spinach, roasted peppers, and melted Asiago cheese on a plate. Drizzle with the mushroom brandy sauce before serving.
