Preparation of Veal

    Pound the Veal

    Place the veal cutlets between two pieces of plastic wrap. Use a meat mallet to pound the cutlets to about 1/2 inch thickness.

    Season the Veal

    Season both sides of the veal cutlets with salt and black pepper.

Breading Process

    Set Up Breading Station

    In three separate shallow dishes, place the flour, beaten eggs, and a mixture of bread crumbs and Parmesan cheese.

    Bread the Veal

    Dredge each veal cutlet in the flour, shaking off the excess. Dip into the beaten eggs, then coat with the bread crumb mixture, pressing lightly to adhere.

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Fry the Veal

    Carefully add the breaded veal cutlets to the skillet and cook for about 3-4 minutes per side until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain.

    Assemble the Dish

    In a baking dish, spread a layer of marinara sauce. Place the fried veal cutlets on top, then cover each cutlet with more marinara sauce and sprinkle with shredded mozzarella cheese and fresh basil leaves.

    Preheat the oven to 400°F (200°C). Bake the assembled dish in the preheated oven for about 15-20 minutes until the cheese is bubbly and golden.
