    Season the Steak

    Pat the ribeye steaks dry with paper towels. Generously season both sides with salt and black pepper. Let the steaks sit at room temperature for about 30 minutes to allow the seasoning to penetrate.

    Prepare the Cooking Surface

    Heat a heavy skillet or cast iron pan over high heat for about 5 minutes until it's very hot. Add the olive oil and swirl to coat the bottom of the pan.

    Sear the Steak

    Carefully place the seasoned ribeye steaks in the hot skillet. Sear without moving them for about 4-5 minutes, until a crust forms.

    Flip the Steak

    Using tongs, flip the steaks and sear the other side for another 4-5 minutes. If using, add garlic cloves, fresh rosemary, and butter to the pan.

    Baste the Steak (Optional)

    As the second side cooks, tilt the pan and use a spoon to baste the steaks with the melted butter and juices for more flavor.

Resting and Serving

    Remove the steaks from the pan and place them on a cutting board. Tent loosely with foil and let them rest for about 5-10 minutes to allow the juices to redistribute.
