Method
Pasta Preparation
- 1
Cook the Spaghetti
Bring a large pot of salted water to a boil. Add 400 grams of spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.
- 2
Drain the Pasta
Once cooked, reserve about 1 cup of pasta water, then drain the spaghetti in a colander. Set aside while you prepare the clam sauce.
Clam Sauce Preparation
- 3
Sauté Garlic
In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add 4 teaspoons of minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- 4
Add Clams
Add 500 grams of fresh clams to the skillet and sprinkle in 1 teaspoon of red pepper flakes. Stir to combine, and cover the skillet. Cook for about 5-7 minutes, or until the clams have opened.
- 5
Deglaze with Wine
Remove the lid and carefully pour in 100 ml of white wine. Cook for an additional 2-3 minutes to allow the alcohol to evaporate and the flavors to meld.
- 6
Combine with Pasta
Add the drained spaghetti to the skillet with the clam sauce. Toss gently to combine, adding reserved pasta water as needed to create a light sauce consistency.
- 7
Finish and Serve
Stir in 2 tablespoons of chopped fresh parsley and season with black pepper to taste. Serve immediately with extra parsley on top, if desired.
