    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the manicotti shells and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside to cool.

    Make the Filling

    In a large bowl, combine ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, chopped parsley, salt, and black pepper. Mix until well combined.

    Prepare the Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Pour in marinara sauce and Italian seasoning. Bring to a simmer and cook for about 10 minutes.

Assembly and Baking

    Stuff the Shells

    Preheat your oven to 350°F (175°C). Using a small spoon or a piping bag, fill each manicotti shell with the ricotta mixture. Place the stuffed shells in a baking dish.

    Add Sauce

    Pour the marinara sauce evenly over the stuffed manicotti shells. Sprinkle the remaining mozzarella cheese on top.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

    Once baked, remove from the oven and let it cool for 5 minutes before serving. Garnish with additional parsley if desired.
