Cooking Pasta

In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt to the water.

Once the water is boiling, add 8 oz of spaghetti and cook according to package instructions until al dente, typically about 8-10 minutes.

Once the spaghetti is cooked, reserve 1 cup of pasta water, then drain the spaghetti in a colander.
Preparing Greens

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté for about 1-2 minutes until fragrant.

Add 4 cups of fresh spinach and 2 cups of chopped kale to the skillet with the garlic. Stir frequently and cook until the greens are wilted, about 3-5 minutes.
