Method

Chicken Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and black pepper on both sides.

  2. 2

    Coat the Chicken

Set up a breading station: place flour in one shallow dish, beaten eggs in another, and breadcrumbs mixed with grated Parmesan in a third. Dredge each chicken breast in flour, then dip into the eggs, and finally coat with the breadcrumb mixture.

  3. 3

    Fry the Chicken

In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.

Sauce Preparation

  1. 4

    Make the Sauce

In the same skillet, add more olive oil if needed and sauté the minced garlic until fragrant, about 30 seconds. Add the crushed tomatoes, oregano, basil, sugar, salt, and black pepper. Simmer for about 10-15 minutes to thicken slightly.

Assembly and Baking

  1. 5

    Assemble the Dish

In a baking dish, spread a thin layer of the sauce on the bottom. Place the fried chicken breasts on top, then cover each piece with more sauce, followed by shredded mozzarella cheese and fresh basil leaves.

  2. 6

    Bake

Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden.

  3. 7

    Serve

Let the Chicken Parmigiana cool for a few minutes before serving. Enjoy with pasta or a fresh salad.
