Pasta

Method

Pasta

  1. 1

    Prepare the Dough

In a large bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Using a fork, gradually mix the flour into the eggs until a dough begins to form.

  2. 2

    Knead the Dough

Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap it in plastic wrap and let it rest for 30 minutes.

Cheese Filling

  1. 3

    Mix the Filling

In a mixing bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, black pepper, and chopped parsley. Mix until well combined and set aside.

Meat Sauce

  1. 4

    Cook the Meat

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and fragrant, about 3-4 minutes.

  2. 5

    Brown the Beef

Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

  3. 6

    Add Tomatoes and Seasoning

Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, and black pepper. Bring the sauce to a simmer and let it cook for 20 minutes, stirring occasionally.

Assembly

  1. 7

    Roll Out the Dough

After the dough has rested, roll it out on a floured surface to about 1/16-inch thick. Cut into squares, about 2 inches by 2 inches.

  2. 8

    Fill the Ravioli

Place a teaspoon of cheese filling in the center of each square. Moisten the edges with water, fold the dough over to create a triangle, and press to seal. Trim any excess dough.

  3. 9

    Cook the Ravioli

Bring a large pot of salted water to a boil. Carefully drop in the ravioli and cook for 3-4 minutes or until they float to the top. Remove with a slotted spoon and drain.

  4. 10

    Serve

Plate the ravioli and spoon the meat sauce on top. Optionally garnish with additional grated Parmesan cheese and fresh parsley.
