Method

Preparation

  1. 1

    Marinate the Chicken

In a bowl, mix together the olive oil, minced garlic, lemon juice, salt, black pepper, and paprika. Add the chicken breast to the marinade, ensuring it is well coated. Cover and refrigerate for at least 30 minutes.

  2. 2

    Chop the Vegetables

While the chicken is marinating, chop the bell peppers and onion into bite-sized pieces and set aside.

Cooking

  1. 3

    Cook the Chicken

Heat a large skillet over medium heat. Remove the chicken from the marinade and add to the skillet. Cook for about 6-7 minutes on each side until fully cooked and golden brown. Remove from the skillet and let it rest.

  2. 4

    Sauté the Vegetables

In the same skillet, add the chopped bell peppers and onion. Sauté for about 5-6 minutes until softened, scraping up any bits left from the chicken.

  3. 5

    Combine Ingredients

Slice the cooked chicken and return it to the skillet with the sautéed vegetables. Stir in the fresh herbs and adjust seasoning if necessary. Cook together for an additional 2-3 minutes.

Serving

  1. 6

    Prepare the Sides

While the chicken and vegetables are cooking, prepare the rice according to package instructions. Toss mixed greens with a light vinaigrette.

  2. 7

    Plate the Dish

On a plate, serve a generous portion of the chicken and vegetable mix alongside a scoop of rice and a handful of mixed greens. Serve with crusty bread on the side.
