Preparation Instructions
Preheat the Oven
Preheat your oven to 375°F (190°C). Grease four ramekins with butter and dust with granulated sugar, tapping out any excess.
Melt the Chocolate
In a double boiler, melt the bittersweet chocolate and 2 tablespoons of unsalted butter together. Stir until smooth and remove from heat. Let it cool slightly.
Whisk Egg Yolks
In a separate bowl, whisk together 4 egg yolks, half of the granulated sugar, vanilla extract, and a pinch of salt until pale and creamy.
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg yolk mixture, stirring constantly until fully combined.
Beat Egg Whites
In a clean bowl, beat the egg whites until soft peaks form. Gradually add the remaining granulated sugar and continue beating until stiff peaks form.
Fold Egg Whites
Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.
Fill Ramekins
Spoon the soufflé mixture into the prepared ramekins, filling them about 3/4 full.
Bake
Place the ramekins in the preheated oven and bake for 12-15 minutes, or until the soufflés have risen and are set on the outside but still soft in the center.
Serve
Remove from the oven, dust with powdered sugar, and serve immediately for the best rise.
