Prepare the Soufflé Base

Preheat your oven to 375°F (190°C). In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, then gradually whisk in the milk until smooth. Remove from heat and let cool slightly.

Mix the Egg Yolks

In a bowl, beat the egg yolks and half of the granulated sugar until pale and fluffy. Add the vanilla extract and the cooled milk mixture, mixing until combined.

Whip the Egg Whites

In a separate bowl, whip the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining granulated sugar and continue to whip until stiff peaks form.

Combine Mixtures

Gently fold the egg whites into the yolk mixture until just combined.

Add Flavorings

Divide the base mixture into 6 separate bowls. In each bowl, add a different flavor: raspberries, melted dark chocolate, Grand Marnier, bread pudding, praline pecans, and diced apricots. Mix gently.

Bake the Soufflés

Pour each flavored mixture into greased ramekins. Place ramekins in a baking dish and add hot water to the dish, ensuring it reaches halfway up the sides of the ramekins. Bake for 20-25 minutes until puffed and golden.

Remove from the oven and serve immediately for the best soufflé experience.
