Prepare the Ingredients
Slice the andouille sausage, dice the red bell pepper, and slice the onion. Peel and devein the shrimp if not already done.

Caramelize the Onions
In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook, stirring frequently, until golden brown and caramelized, about 10-15 minutes.

Add the Vegetables and Shrimp
Stir in the diced red bell pepper and pepperoncini. Cook for an additional 3-5 minutes. Then add the shrimp, salt, and black pepper. Cook until the shrimp are pink and opaque, about 3-4 minutes.

Combine with Marinara
Pour in the Cajun marinara sauce and stir well to combine. Let the mixture simmer for about 5 minutes on low heat.

Add Cheese and Serve
Preheat your oven to 375°F (190°C). Transfer the mixture to a baking dish, top with shredded mozzarella cheese, and bake for 15-20 minutes or until the cheese is melted and bubbly.
