Prepare the Simple Syrup
In a small saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Remove from heat and let cool.

Blend the Fruits
In a blender, combine the diced honeydew melon, cantaloupe, green apple, and fresh lime juice. Blend until smooth.

Combine and Chill
Pour the simple syrup into the blended fruit mixture and blend again until well combined. Transfer the mixture to a bowl and refrigerate for at least 2 hours, or until thoroughly chilled.

Freeze the Sorbet
Once chilled, transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Then, transfer the sorbet to an airtight container and freeze for at least 4 hours, or until firm.
