Prepare the Remoulade

In a bowl, mix together mayonnaise, Dijon mustard, lemon juice, chopped dill pickles, dill weed, hot sauce, and salt to taste. Set aside in the refrigerator to chill.

Set Up Breading Station

In one bowl, combine flour, Old Bay seasoning, salt, and black pepper. In a second bowl, whisk together eggs and milk. In a third bowl, combine cornmeal with a pinch of salt.

Bread the Shrimp

Dip each shrimp into the flour mixture, then into the egg mixture, and finally coat with cornmeal. Ensure each shrimp is well-coated.

Heat Oil

In a large, heavy skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp

Carefully place the breaded shrimp into the hot oil in batches, being cautious not to overcrowd the pan. Fry until golden brown and cooked through, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

Serve

Serve the fried shrimp hot with the spicy dill remoulade on the side for dipping.
