Method

Directions

  1. 1

    Preparation of Okra

Wash the okra and trim the ends. Slice them into 1/2 inch pieces.

  2. 2

    Coating the Okra

In a bowl, mix cornmeal, flour, salt, and black pepper. In another bowl, whisk together eggs and buttermilk. Dip each okra piece into the egg mixture, then into the cornmeal mixture to coat.

  3. 3

    Frying the Okra

Heat vegetable oil in a deep pan to 350°F (175°C). Fry the okra in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

  4. 4

    Preparing Shishitos

In a separate pan, heat a little oil and sauté the shishito peppers until blistered and tender, about 5-7 minutes.

  5. 5

    Making Spicy Aioli

In a bowl, combine mayonnaise, lemon juice, minced garlic, sriracha, and espelette pepper. Mix well and adjust seasoning to taste.

  6. 6

    Serving

Serve the fried okra alongside the sautéed shishitos, with the spicy aioli for dipping.
