    Prepare the Oxtail

    Season the oxtail pieces with salt and black pepper.

    Sear the Oxtail

    In a large pot, heat the vegetable oil over medium-high heat. Add the oxtail and sear until browned on all sides. Remove from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Liquids and Spices

    Return the oxtail to the pot and add the allspice, bay leaves, beef broth, and red wine. Bring to a simmer.

    Braise the Oxtail

    Cover the pot and reduce the heat to low. Let it braise for about 3 hours or until the oxtail is tender and falls off the bone.

    Serve

    Remove the oxtail from the pot and let it rest for a few minutes. Serve with plantain tostones and pickled red onions.
