Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
Season the Pork Belly
Rub the salt, black pepper, minced garlic, and thyme all over the pork belly, making sure to get into the scored areas.
Sear the Pork Belly
In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork belly skin-side down and sear until the skin is crispy, about 5-7 minutes.
Add Vinegar and Honey
Carefully flip the pork belly over and add the apple cider vinegar and honey to the skillet.
Bake the Pork Belly
Transfer the skillet to the preheated oven and bake for about 2.5 to 3 hours, or until the pork is tender and the skin is crispy.
Rest and Serve
Remove the pork belly from the oven and let it rest for 15 minutes before slicing. Serve warm.
