Vanilla Bean Crème Brûlée

Prepare the Cream
In a saucepan, heat the heavy cream and split vanilla bean over medium heat until it's just about to boil. Remove from heat and let steep for 15 minutes.

Mix Egg Yolks
In a bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until smooth and pale.

Combine
Slowly pour the warm cream mixture into the egg yolk mixture, whisking continuously until well combined.

Strain
Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove the vanilla bean and any coagulated egg bits.

Cool and Chill
Remove from the oven, let cool, then cover with plastic wrap and refrigerate for at least 2 hours.

Caramelize
Sprinkle a thin layer of turbinado sugar on top of each chilled custard and use a kitchen torch to caramelize the sugar until golden brown.

Mix Dry Ingredients
Preheat the oven to 350°F (175°C). In a bowl, mix together flour, sugar, baking powder, and salt.

Add Almonds
Fold in the almonds until evenly distributed.

Shape and Bake
Shape the dough into a log on a baking sheet lined with parchment paper. Bake for 25-30 minutes until golden.

Slice and Second Bake
Let cool for 10 minutes, then slice the log into 1/2 inch thick slices. Bake again for 10-15 minutes until crisp.

Rinse the fresh berries under cold water and pat dry with a paper towel.
